Description

Delicious muffin-sized meatloaf stuffed with gooey cheddar cheese, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • 1 cup cheddar cheese, shredded
  • 1/2 cup onion, finely chopped
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Ketchup or barbecue sauce (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tray.
  2. Combine the ground beef, breadcrumbs, egg, onion, milk, garlic powder, salt, and pepper in a large bowl. Mix until well combined.
  3. Take a small amount of the meat mixture and flatten it in your palm. Place a tablespoon of cheddar cheese in the center and wrap the meat around it, forming a meatball.
  4. Place each meatball into the muffin tray.
  5. Top each muffin with a dollop of ketchup or barbecue sauce if desired.
  6. Bake in the preheated oven for 20-25 minutes, or until the meat is cooked through.
