Delicious muffin-sized meatloaf stuffed with gooey cheddar cheese, perfect for busy weeknights.
Ingredients

- 1 lb ground beef
- 1 cup breadcrumbs
- 1 egg
- 1 cup cheddar cheese, shredded
- 1/2 cup onion, finely chopped
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Ketchup or barbecue sauce (optional, for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a muffin tray.
- Combine the ground beef, breadcrumbs, egg, onion, milk, garlic powder, salt, and pepper in a large bowl. Mix until well combined.
- Take a small amount of the meat mixture and flatten it in your palm. Place a tablespoon of cheddar cheese in the center and wrap the meat around it, forming a meatball.
- Place each meatball into the muffin tray.
- Top each muffin with a dollop of ketchup or barbecue sauce if desired.
- Bake in the preheated oven for 20-25 minutes, or until the meat is cooked through.
