Instructions

  1. Prepare ingredients and workspace: Gather eggs, measure flour, and line baking sheets.
  2. Make pâte à choux: Preheat oven, heat water and butter, add flour, cook until a ball forms, then add eggs.
  3. Pipe and bake choux: Pipe rounds, bake at two temperatures for specified times, then cool.
  4. Make pastry cream: Heat milk, whisk yolks with sugar and cornstarch, thicken, chill.
  5. Prepare caramel: Combine sugar, water, and corn syrup, cook until deep amber.
  6. Fill puffs and dip: Pipe cream into puffs, dip in caramel to set.
  7. Assemble the tower: Layer puffs in a pyramid, using whipped cream for stability.
  8. Final touches: Dust with powdered sugar, decorate with chocolate.
