Description

Delicious cookies filled with creamy vanilla custard and topped with rich chocolate glaze, inspired by the classic Boston Cream Pie.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup vanilla custard (for filling)
  • 1/2 cup chocolate ganache (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together the butter and sugar until light and fluffy.
  3. Add the vanilla extract and milk, mixing until combined.
  4. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add to the wet mixture and mix until just combined.
  5. Drop tablespoon-sized dough onto the prepared baking sheet, spacing them 2 inches apart.
  6. Bake for 12 minutes or until cookies are set. Let them cool completely.
  7. Once cool, fill half the cookies with vanilla custard and sandwich with the other half.
  8. Drizzle or spread chocolate ganache on top of the cookies.

Notes

For a richer flavor, allow the ganache to set slightly before serving.
