Description

Delicious cookies combining chewy oats, sweet blueberries, and crunchy pistachios, perfect for snacks or dessert.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup blueberries
  • 1/4 cup chopped pistachios
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter and brown sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. Mix the rolled oats, flour, baking soda, and salt in another bowl.
  5. Add the dry ingredients to the wet mixture gradually until combined.
  6. Fold in the blueberries and chopped pistachios gently.
  7. Drop tablespoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For extra flavor, add a pinch of cinnamon to the dry ingredients and ensure the butter is softened properly.
