Description

Chewy and crunchy cookies made with nutritious oats, sweet blueberries, and delightful pistachios, perfect for a snack or quick breakfast.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup pistachios, chopped
  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup unsalted butter, softened
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter and brown sugar in a large bowl.
  3. Beat in the egg and vanilla extract.
  4. Whisk together the rolled oats, flour, baking soda, and salt in another bowl.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the chopped pistachios and blueberries.
  7. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until golden brown.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
