Instructions
- Gather ingredients and use room-temperature water for quicker chia swelling.
- Peel and chop the beetroot into small pieces.
- Blend the beetroot with water until smooth, then strain to extract the juice.
- In a separate bowl, add chia seeds to water and let soak for 10–15 minutes until they form a gel.
- Mix beetroot juice with soaked chia seeds and add lemon juice for tang or honey for sweetness.
- Chill the mixture for 10–30 minutes for the best texture.
- Taste and adjust acidity or sweetness as needed.
- Serve chilled or at room temperature. Store in a sealed jar for up to 48 hours in the fridge.
