- 3 ripe bananas (about 400 g)
- 250 g (2 cups) all-purpose flour
- 150 g (3/4 cup) granulated sugar
- 50 g (1/4 cup) unsalted butter
- 2 large eggs
- 240 ml (1 cup) buttermilk
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla extract
- 200 g (1 cup) chocolate chips
Instructions
- Preheat your oven to 180°C (350°F). Line a 12-cup muffin tin with paper liners or spray it lightly with cooking spray.
- Mash the bananas in a mixing bowl until smooth. Add the granulated sugar, melted butter, eggs, and vanilla extract. Mix thoroughly until well combined.
- Combine the flour, baking soda, baking powder, and a pinch of salt in another bowl. Whisk until there are no lumps.
- Gradually add the dry ingredients to the banana mixture. Do not overmix; stop as soon as no dry flour is visible. Gently fold in the buttermilk and then the chocolate chips.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
Notes
Ensure your bananas are very ripe for maximum sweetness. You can prepare the batter a night before and store it in the fridge.
