Description

Ingredients

  • 250 g (2 cups) all-purpose flour
  • 125 g (½ cup) cream cheese, softened
  • 100 g (½ cup) brown sugar
  • 2 ripe bananas
  • 1 large egg
  • 60 ml (¼ cup) whole milk
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 100 g (½ cup) chocolate chips

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. Line the muffin tin with paper liners or grease well.
  3. Whisk together flour, baking powder, and baking soda in a bowl.
  4. Beat together cream cheese and brown sugar until smooth, then add bananas, egg, and milk, mixing well.
  5. Fold the dry ingredients into the wet ingredients until combined.
  6. Stir in chocolate chips gently.
  7. Spoon the batter into muffin cups, filling each about ¾ full.
  8. Bake for 18-20 minutes, until a toothpick comes out clean.
  9. Cool in the tin for 5 minutes before transferring to a wire rack.

Avoid overmixing to keep muffins light and fluffy. Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months.
