Description

Crispy, golden roasted red potatoes meld with savory bacon and sweet onions for a flavor explosion that elevates any meal.


Ingredients

  • 1.5 lbs red potatoes, quartered
  • 46 strips of bacon, chopped
  • 1 medium onion, diced
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp garlic powder
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and quarter the red potatoes.
  3. In a bowl, combine potatoes, bacon, onion, olive oil, salt, pepper, and garlic powder.
  4. Toss to coat and spread on a baking sheet.
  5. Roast for 30-35 minutes, stirring halfway through.
  6. Garnish with parsley before serving.

Notes
