Instructions
- Preheat oven to 400°F (200°C).
- Wash and quarter the red potatoes.
- In a bowl, combine potatoes, bacon, onion, olive oil, salt, pepper, and garlic powder.
- Toss to coat and spread on a baking sheet.
- Roast for 30-35 minutes, stirring halfway through.
- Garnish with parsley before serving.
