- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1 large egg
- 1 cup apple cider
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 2 ounces cream cheese, softened
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix together the flour, baking soda, cinnamon, and salt in a bowl. Set aside.
- Cream together the butter and brown sugar until fluffy in another bowl. Add the egg, apple cider, and vanilla extract; mix until combined.
- Stir the dry ingredients into the wet ingredients until just combined.
- Drop spoonfuls of the batter onto the prepared baking sheet, spacing them apart.
- Bake for 10-12 minutes or until a toothpick comes out clean. Let cool completely.
- Beat together the powdered sugar and cream cheese until smooth for the filling. Spread the filling on the flat side of one cookie and top with another to create a sandwich.
