Description

Delightful whoopie pies that combine the flavors of autumn with creamy frosting, perfect for fall gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 ounces cream cheese, softened

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix together the flour, baking soda, cinnamon, and salt in a bowl. Set aside.
  3. Cream together the butter and brown sugar until fluffy in another bowl. Add the egg, apple cider, and vanilla extract; mix until combined.
  4. Stir the dry ingredients into the wet ingredients until just combined.
  5. Drop spoonfuls of the batter onto the prepared baking sheet, spacing them apart.
  6. Bake for 10-12 minutes or until a toothpick comes out clean. Let cool completely.
  7. Beat together the powdered sugar and cream cheese until smooth for the filling. Spread the filling on the flat side of one cookie and top with another to create a sandwich.
