Ingredients

  • 34 lbs chuck roast
  • 2 cups apple cider
  • 1 lb potatoes, diced
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 2 carrots, chopped
  • 2 sprigs fresh thyme
  • Salt and pepper to taste
  • Olive oil for searing

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Season the roast with salt and pepper, and sear in olive oil.
