  3. Stir in light brown sugar, then add golden syrup and egg, mixing until a smooth dough forms.
  4. Wrap the dough in cling film and refrigerate for at least 30 minutes.
  5. Preheat your oven to 180Β°C (350Β°F) and roll out the chilled dough to 5mm (1/4 inch) thickness.
  6. Use gingerbread men cookie cutters to cut out shapes and place them on a lined baking tray.
  7. Bake for 10-12 minutes until slightly browned at the edges.
  8. Cool on a wire rack before decorating with icing.
