Description

A hearty and flavorful vegetarian lasagna packed with layers of vegetables and rich cheese.


Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 zucchinis, sliced
  • 1 red bell pepper, chopped
  • 1 cup mushrooms, sliced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cups marinara sauce
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Heat olive oil in a skillet over medium heat.
  4. Add onion and garlic, and sauté until fragrant.
  5. Stir in zucchini, bell pepper, and mushrooms. Cook until tender.
  6. Combine the vegetables with dried basil, oregano, salt, and pepper.
  7. Spread a layer of marinara sauce on the bottom of a baking dish.
  8. Layer 3 lasagna noodles over the sauce, then add half of the vegetable mixture and half of the ricotta cheese.
  9. Add another layer of marinara sauce and sprinkle with mozzarella cheese.
  10. Repeat the layering process, finishing with noodles, marinara sauce, mozzarella, and Parmesan on top.
  11. Bake for 30-35 minutes, until bubbly and golden.
  12. Let it cool for 10 minutes before slicing and serving.

Notes

For extra flavor, try adding fresh herbs or spices to the vegetable mix.
