A hearty and flavorful vegetarian lasagna packed with layers of vegetables and rich cheese.
Ingredients

- 9 lasagna noodles
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 zucchinis, sliced
- 1 red bell pepper, chopped
- 1 cup mushrooms, sliced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 2 cups marinara sauce
- 2 cups ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- Heat olive oil in a skillet over medium heat.
- Add onion and garlic, and sauté until fragrant.
- Stir in zucchini, bell pepper, and mushrooms. Cook until tender.
- Combine the vegetables with dried basil, oregano, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles over the sauce, then add half of the vegetable mixture and half of the ricotta cheese.
- Add another layer of marinara sauce and sprinkle with mozzarella cheese.
- Repeat the layering process, finishing with noodles, marinara sauce, mozzarella, and Parmesan on top.
- Bake for 30-35 minutes, until bubbly and golden.
- Let it cool for 10 minutes before slicing and serving.
Notes
For extra flavor, try adding fresh herbs or spices to the vegetable mix.
