A quick and nourishing Zesty Green Chicken Chili Soup that combines chicken, white beans, and avocado for a flavorful family meal.

- 1 lb chicken breasts (cooked and shredded)
- 1 can white beans (drained and rinsed)
- 1 cup chicken broth
- 1 cup green salsa
- 1 avocado (diced)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- Fresh cilantro (for garnish)
Instructions
- Start by chopping your onion and dicing the avocado into small pieces. Mince the garlic.
- In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the minced garlic and sauté for an additional 1-2 minutes.
- Add the shredded chicken, white beans, chicken broth, green salsa, cumin, and oregano to the pot. Stir well to combine all flavors.
- Increase the heat and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 20 minutes.
- Once the soup is done simmering, season it with salt and pepper to taste. Serve hot, topped with freshly diced avocado and a sprinkle of cilantro for garnish.
Notes
For a creamier soup, blend a small portion of the beans with a bit of broth before adding them back to the soup. Adjust seasonings based on your taste.
