Description

A quick and nourishing Zesty Green Chicken Chili Soup that combines chicken, white beans, and avocado for a flavorful family meal.


Ingredients

  • 1 lb chicken breasts (cooked and shredded)
  • 1 can white beans (drained and rinsed)
  • 1 cup chicken broth
  • 1 cup green salsa
  • 1 avocado (diced)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)

Instructions

  1. Start by chopping your onion and dicing the avocado into small pieces. Mince the garlic.
  2. In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the minced garlic and sauté for an additional 1-2 minutes.
  3. Add the shredded chicken, white beans, chicken broth, green salsa, cumin, and oregano to the pot. Stir well to combine all flavors.
  4. Increase the heat and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for 20 minutes.
  5. Once the soup is done simmering, season it with salt and pepper to taste. Serve hot, topped with freshly diced avocado and a sprinkle of cilantro for garnish.

Notes

For a creamier soup, blend a small portion of the beans with a bit of broth before adding them back to the soup. Adjust seasonings based on your taste.
