- 2 chicken breasts, cooked and shredded
- 4 cups chicken broth
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 2 cups bok choy, chopped
- 1 carrot, julienned
- 1 onion, chopped
- Salt and pepper to taste
- Green onions, for garnish
Instructions
- Gather all your ingredients and chop the onion, garlic, ginger, carrots, and bok choy.
- In a large pot, heat oil over medium heat. Add onion, garlic, and ginger; sauté until fragrant (about 2 minutes).
- Add the chicken broth to the pot and bring to a simmer.
- Stir in the shredded chicken, soy sauce, carrots, and bok choy. Simmer for 5-7 minutes until the bok choy is tender.
- Add salt and pepper to taste.
- Ladle the soup into bowls and garnish with sliced green onions. Serve hot.
Notes
For rich flavor, use low-sodium or homemade chicken broth. Adjust the seasoning to your preference.
