Ingredients

  • 2 chicken breasts, cooked and shredded
  • 4 cups chicken broth
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 2 cups bok choy, chopped
  • 1 carrot, julienned
  • 1 onion, chopped
  • Salt and pepper to taste
  • Green onions, for garnish

Instructions

  1. Gather all your ingredients and chop the onion, garlic, ginger, carrots, and bok choy.
  2. In a large pot, heat oil over medium heat. Add onion, garlic, and ginger; sauté until fragrant (about 2 minutes).
  3. Add the chicken broth to the pot and bring to a simmer.
  4. Stir in the shredded chicken, soy sauce, carrots, and bok choy. Simmer for 5-7 minutes until the bok choy is tender.
  5. Add salt and pepper to taste.
  6. Ladle the soup into bowls and garnish with sliced green onions. Serve hot.

Notes

For rich flavor, use low-sodium or homemade chicken broth. Adjust the seasoning to your preference.
