A comforting and versatile dish that combines marinated chicken with warm elements and aromatic finishers, inspired by Asian flavors.


Ingredients

  • 1.5 lbs boneless chicken thighs
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons mirin
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 tablespoon sugar
  • 4 cups shredded cabbage
  • 2 cups cooked jasmine rice
  • 1 lime, juiced
  • 2 scallions, sliced
  • Toasted sesame seeds for garnish

Instructions

  1. In a bowl, combine soy sauce, rice vinegar, mirin, sesame oil, garlic, ginger, and sugar to create the marinade.
  2. Trim and dry the chicken thighs, then marinate for at least 15 minutes, up to overnight.
  3. Heat a skillet over medium-high heat, add neutral oil, and sear the chicken until browned, about 5-7 minutes per side.
  4. In the same skillet, add shredded cabbage with a splash of rice vinegar and a pinch of salt; toss until slightly wilted.
  5. Serve the warm rice topped with sliced chicken and the wilted cabbage, drizzled with lime juice, and garnish with scallions and sesame seeds.

Notes

For gluten-free, substitute soy sauce with tamari. Ensure to rest chicken before slicing for juicier results.
