- 1.5 lbs boneless chicken thighs
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons mirin
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 tablespoon sugar
- 4 cups shredded cabbage
- 2 cups cooked jasmine rice
- 1 lime, juiced
- 2 scallions, sliced
- Toasted sesame seeds for garnish
Instructions
- In a bowl, combine soy sauce, rice vinegar, mirin, sesame oil, garlic, ginger, and sugar to create the marinade.
- Trim and dry the chicken thighs, then marinate for at least 15 minutes, up to overnight.
- Heat a skillet over medium-high heat, add neutral oil, and sear the chicken until browned, about 5-7 minutes per side.
- In the same skillet, add shredded cabbage with a splash of rice vinegar and a pinch of salt; toss until slightly wilted.
- Serve the warm rice topped with sliced chicken and the wilted cabbage, drizzled with lime juice, and garnish with scallions and sesame seeds.
Notes
For gluten-free, substitute soy sauce with tamari. Ensure to rest chicken before slicing for juicier results.
