Description

A comforting, delicious soup featuring roasted butternut squash, savory chicken sausage, and fresh spinach, perfect for chilly nights.


Ingredients

  • 1 butternut squash, peeled and diced
  • 2 chicken sausages, sliced
  • 4 cups chicken broth
  • 2 cups fresh spinach
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion and garlic until translucent.
  3. Cook chicken sausage until browned.
  4. Add butternut squash and thyme; cook for 5 minutes.
  5. Pour in chicken broth; simmer until squash is tender.
