Description

A heartwarming and hearty beef and vegetable stew, perfect for comfort on busy weeknights.


Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup green beans, trimmed
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add beef and brown for 5-7 minutes.
  2. Add onions and garlic, sauté until softened.
  3. Pour in beef broth, bring to a boil.
  4. Add carrots, potatoes, thyme, and rosemary. Simmer for 1.5 to 2 hours until beef is tender.
  5. Stir in green beans and cook an additional 10-15 minutes.
  6. Season with salt and pepper to taste. Serve warm.

Notes

This stew gets even better the next day; let it cool and store in airtight containers in the fridge for up to 3 days.
