Ingredients

- 2 lbs beef chuck, cut into cubes
- 4 cups beef broth
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup green beans, trimmed
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat. Add beef and brown for 5-7 minutes.
- Add onions and garlic, sauté until softened.
- Pour in beef broth, bring to a boil.
- Add carrots, potatoes, thyme, and rosemary. Simmer for 1.5 to 2 hours until beef is tender.
- Stir in green beans and cook an additional 10-15 minutes.
- Season with salt and pepper to taste. Serve warm.
Notes
This stew gets even better the next day; let it cool and store in airtight containers in the fridge for up to 3 days.
