- 1 lb Chicken Breast, diced
- 8 oz Rice Noodles
- 1/2 cup Peanut Butter
- 3 tbsp Soy Sauce
- 1 cup Coconut Milk
- 2 cloves Garlic, minced
- 1 tbsp Ginger, grated
- 2 tbsp Lime Juice
- 2 Carrots, julienned
- 1 Bell Pepper, sliced
- 2 Green Onions, chopped
- 1/4 cup Cilantro, for garnish
- 1/4 cup Crushed Peanuts, for garnish
Instructions
- Cook the rice noodles according to package instructions and set aside.
- In a skillet, heat oil over medium heat and add diced chicken, cooking until browned.
- In a bowl, mix peanut butter, soy sauce, coconut milk, minced garlic, grated ginger, and lime juice.
- Pour the sauce over the chicken and let simmer for a few minutes.
- Add the noodles, carrots, and bell peppers; toss to coat.
- Serve in bowls, garnished with green onions, cilantro, and crushed peanuts.
Notes
This dish can be easily customized by using tofu or shrimp instead of chicken and various vegetables.
