Description

A quick and easy Thai Peanut Chicken Noodle Bowls recipe that combines juicy chicken, colorful veggies, and creamy peanut sauce, ready in just 30 minutes.


Ingredients

  • 1 lb Chicken Breast, diced
  • 8 oz Rice Noodles
  • 1/2 cup Peanut Butter
  • 3 tbsp Soy Sauce
  • 1 cup Coconut Milk
  • 2 cloves Garlic, minced
  • 1 tbsp Ginger, grated
  • 2 tbsp Lime Juice
  • 2 Carrots, julienned
  • 1 Bell Pepper, sliced
  • 2 Green Onions, chopped
  • 1/4 cup Cilantro, for garnish
  • 1/4 cup Crushed Peanuts, for garnish

Instructions

  1. Cook the rice noodles according to package instructions and set aside.
  2. In a skillet, heat oil over medium heat and add diced chicken, cooking until browned.
  3. In a bowl, mix peanut butter, soy sauce, coconut milk, minced garlic, grated ginger, and lime juice.
  4. Pour the sauce over the chicken and let simmer for a few minutes.
  5. Add the noodles, carrots, and bell peppers; toss to coat.
  6. Serve in bowls, garnished with green onions, cilantro, and crushed peanuts.

Notes

This dish can be easily customized by using tofu or shrimp instead of chicken and various vegetables.
