- 8 oz rice noodles
- 1 lb chicken breast, sliced
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1/2 cup green onions, chopped
- 1/2 cup peanuts, chopped
- 1/4 cup soy sauce
- 1/4 cup peanut butter
- 2 tbsp honey
- 2 tbsp sesame oil
- 1 tbsp lime juice
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- Salt and pepper to taste
Instructions
- Prep your ingredients by rinsing and chopping the vegetables and slicing the chicken.
- Boil a pot of salted water and cook the rice noodles according to the package instructions, usually 4-5 minutes. Drain and set aside.
- In a skillet over medium heat, add sesame oil. Once hot, add the sliced chicken; cook until browned, about 5-7 minutes.
- Add sliced bell peppers, julienned carrots, minced garlic, and grated ginger to the skillet. Stir-fry until the vegetables are tender but still crisp, about 3-5 minutes.
- In a bowl, whisk together the soy sauce, peanut butter, honey, lime juice, salt, and pepper until smooth.
- Add the drained noodles and sauce to the skillet, tossing until everything is well coated.
- Serve into bowls and garnish with chopped green onions and peanuts.
