- 1/2 cup breadcrumbs
- 1/4 cup green onions, chopped
- 2 cloves garlic, minced
- 1 egg
- 1 tbsp soy sauce
- 1 tsp ginger, grated

- 1 cup peanut butter
- 1/2 cup coconut milk
- 2 tbsp lime juice
- 2 tbsp soy sauce
- Chopped peanuts and cilantro for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine ground chicken, breadcrumbs, green onions, garlic, egg, soy sauce, and ginger. Season with salt and pepper, mixing gently until just combined.
- Shape the mixture into meatballs about 1-1.5 inches in diameter and place on a greased baking sheet.
- Bake in the preheated oven for 20-25 minutes until golden brown and cooked through.
- In a saucepan, combine peanut butter, coconut milk, lime juice, and soy sauce. Heat over medium, stirring until smooth.
- Serve meatballs drizzled with peanut sauce, garnished with chopped peanuts and cilantro.
