- 4 large eggs
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell peppers
- 1/4 cup chopped green onions
- 1 avocado, sliced
- Salsa or hot sauce, to taste
- Sour cream, for topping
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with foil or parchment.
- Bake tater tots according to package instructions, flipping halfway through, for about 20-25 minutes until golden brown.
- In a skillet, cook bacon or sausage (optional) then scramble the eggs in the rendered fat on medium-low heat.
- Prepare the veggies by dicing the bell peppers and chopping green onions.
- Layer the tater tots in a bowl, add scrambled eggs, the cooked protein if using, sprinkle cheese, then add veggies and top with salsa or sour cream.
- For melted cheese, place the assembled bowl in the oven for 2-3 minutes.
- Garnish with fresh herbs and serve hot.
