Description

A quick and crispy breakfast bowl featuring tater tots, fluffy scrambled eggs, melty cheese, and savory toppings.


Ingredients

  • 1 bag frozen tater tots
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped green onions
  • 1 avocado, sliced
  • Salsa or hot sauce, to taste
  • Sour cream, for topping

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with foil or parchment.
  2. Bake tater tots according to package instructions, flipping halfway through, for about 20-25 minutes until golden brown.
  3. In a skillet, cook bacon or sausage (optional) then scramble the eggs in the rendered fat on medium-low heat.
  4. Prepare the veggies by dicing the bell peppers and chopping green onions.
  5. Layer the tater tots in a bowl, add scrambled eggs, the cooked protein if using, sprinkle cheese, then add veggies and top with salsa or sour cream.
  6. For melted cheese, place the assembled bowl in the oven for 2-3 minutes.
  7. Garnish with fresh herbs and serve hot.
