Ingredients

  • 1 pork tenderloin
  • 1 cup fresh spinach
  • 4 oz cream cheese
  • 1/2 cup sun-dried tomatoes
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine spinach, cream cheese, sun-dried tomatoes, garlic, Italian seasoning, salt, and pepper until well-blended.
  3. Carefully cut a pocket into the pork tenderloin.
  4. Stuff the pork tenderloin with the spinach mixture.
  5. Heat olive oil in an oven-safe skillet over medium-high heat and sear the stuffed pork on all sides until golden brown.
  6. Transfer the skillet to the preheated oven and roast for 25-30 minutes until the internal temperature reaches 145°F (63°C).
  7. Let the pork rest for 5-10 minutes before slicing and serving.
