Ingredients

- 1.5 lbs boneless, skinless chicken thighs
- ½ cup teriyaki sauce
- Taco shells
- 1 cup grilled pineapple, diced
- ½ red onion, diced
- ½ cup cilantro
- Juice of 1 lime
- ½ cup sour cream
- 3 tbsp pineapple juice
- Salt & pepper to taste
Instructions
- Prep Your Ingredients: Dice red onion and cut pineapple into chunks.
- Marinate The Chicken: Marinate chicken thighs in teriyaki sauce for at least 30 minutes.
- Grill the Chicken: Cook chicken on a preheated grill for 6-7 minutes per side.
- Grill the Pineapple: Grill pineapple chunks for 2-3 minutes until caramelized.
- Prepare the Crema: Mix sour cream, pineapple juice, lime juice, and salt and pepper in a bowl.
- Warm Taco Shells: Warm taco shells in the oven or on a skillet.
- Assemble the Tacos: Shred grilled chicken and layer in tacos with pineapple, red onion, cilantro, and crema.
- Serve & Enjoy: Serve immediately for the best experience.
