Description

A quick and easy fusion of sweet teriyaki chicken and savory taco flavors, perfect for busy weeknights.


Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs
  • ½ cup teriyaki sauce
  • Taco shells
  • 1 cup grilled pineapple, diced
  • ½ red onion, diced
  • ½ cup cilantro
  • Juice of 1 lime
  • ½ cup sour cream
  • 3 tbsp pineapple juice
  • Salt & pepper to taste

Instructions

  1. Prep Your Ingredients: Dice red onion and cut pineapple into chunks.
  2. Marinate The Chicken: Marinate chicken thighs in teriyaki sauce for at least 30 minutes.
  3. Grill the Chicken: Cook chicken on a preheated grill for 6-7 minutes per side.
  4. Grill the Pineapple: Grill pineapple chunks for 2-3 minutes until caramelized.
  5. Prepare the Crema: Mix sour cream, pineapple juice, lime juice, and salt and pepper in a bowl.
  6. Warm Taco Shells: Warm taco shells in the oven or on a skillet.
  7. Assemble the Tacos: Shred grilled chicken and layer in tacos with pineapple, red onion, cilantro, and crema.
  8. Serve & Enjoy: Serve immediately for the best experience.
