Description

Ingredients

  • 2 cups mashed sweet potatoes
  • 1 cup whole milk
  • 1 cup warm water (100-110°F)
  • 2 1/4 teaspoons active dry yeast
  • 1 teaspoon granulated sugar
  • 4 tablespoons melted butter
  • 3 tablespoons granulated sugar
  • 45 cups bread flour
  • 1 teaspoon kosher salt
  • Flaky sea salt for topping

Instructions

  1. In a saucepan, bring sweet potato and milk to a boil, then simmer until soft, about 20 minutes. Mash and let cool.
  2. Activate the yeast by combining warm water, yeast, and sugar for 5 minutes until foamy.
  3. In a mixer, combine cooled sweet potato mix, yeast mixture, eggs, melted butter, and sugar.
  4. Add in flour gradually and salt, mixing until a soft dough forms.
  5. Knead the dough on a floured surface for 5 minutes, adding flour if sticky.
  6. Let the dough rise in a greased bowl until doubled, about 1-1.5 hours.
  7. Preheat the oven to 375°F (190°C). Split the dough into 15 balls and place in a greased baking pan.
  8. Let the rolls rise for another 45 minutes. Bake for 18-22 minutes until golden brown.
  9. Brush with a mixture of cane syrup and butter, then sprinkle with flaky sea salt. Serve warm.
