Instructions
- Prepare the kale by stripping leaves from stems, chop into bite-sized ribbons, and place in a bowl. Drizzle with olive oil or water.
- Massage the kale for 1-2 minutes until it darkens and softens slightly.
- In a small bowl, whisk together Greek yogurt, vinegar, maple syrup, salt, and poppy seeds until smooth.
- Add chopped fruits, toasted nuts, and cheese to the massaged kale.
- Pour the dressing over the salad and toss until evenly coated.
