Instructions

  1. Prepare the kale by stripping leaves from stems, chop into bite-sized ribbons, and place in a bowl. Drizzle with olive oil or water.
  2. Massage the kale for 1-2 minutes until it darkens and softens slightly.
  3. In a small bowl, whisk together Greek yogurt, vinegar, maple syrup, salt, and poppy seeds until smooth.
