- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream (optional)
- Sprinkles for decoration (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, cream the butter and sugar together until light and fluffy.
- Add the egg and vanilla to the butter mixture and mix until combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients until just mixed.
- Press half of the cookie dough into the bottom of a greased springform pan to form the crust.
- In another bowl, beat the cream cheese until smooth. Add sugar and mix until glossy. Add eggs one at a time, mixing on low speed. Stir in vanilla and sour cream.
- Pour the cheesecake filling over the cookie crust.
- Bake at 325°F until edges are set and the center jiggles slightly, about 30-40 minutes.
- Let cool to room temperature and then chill for at least 4 hours before serving.
- Decorate with cookie crumbles or sprinkles before serving.
Notes
For a gluten-free version, swap all-purpose flour for a gluten-free blend. Customize with different flavor extracts or mix-ins as desired.
