Description

A deliciously creamy cheesecake on a buttery sugar cookie crust, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream (optional)
  • Sprinkles for decoration (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream the butter and sugar together until light and fluffy.
  3. Add the egg and vanilla to the butter mixture and mix until combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients until just mixed.
  6. Press half of the cookie dough into the bottom of a greased springform pan to form the crust.
  7. In another bowl, beat the cream cheese until smooth. Add sugar and mix until glossy. Add eggs one at a time, mixing on low speed. Stir in vanilla and sour cream.
  8. Pour the cheesecake filling over the cookie crust.
  9. Bake at 325°F until edges are set and the center jiggles slightly, about 30-40 minutes.
  10. Let cool to room temperature and then chill for at least 4 hours before serving.
  11. Decorate with cookie crumbles or sprinkles before serving.

Notes

For a gluten-free version, swap all-purpose flour for a gluten-free blend. Customize with different flavor extracts or mix-ins as desired.
