Description

Ingredients

  • 34 very ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • For the Glaze (Optional but Highly Recommended!):
  • 1 cup powdered sugar
  • 12 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • Sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease and flour a 9×5-inch loaf pan, or line it with parchment paper.
  2. In a medium bowl, mash your very ripe bananas with a fork or potato masher until mostly smooth with a few small lumps remaining.
  3. In a large mixing bowl, cream together the softened unsalted butter and granulated sugar on medium speed until light, fluffy, and pale in color, about 2-3 minutes.
  4. Beat in the large eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and almond extract until just combined.
  5. In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Gradually add the dry ingredient mixture to the wet ingredients, alternating with the mashed bananas, mixing on low speed until just combined.
  7. Pour the batter into the prepared loaf pan and spread it evenly. Bake for 55-70 minutes, or until a wooden skewer or toothpick inserted into the center comes out clean.
  8. Once baked, let the bread cool in the pan for about 10-15 minutes before transferring it to a wire rack to cool completely.
  9. Once the bread is completely cool, whisk together the powdered sugar, milk or cream, vanilla extract, and almond extract in a small bowl until smooth.
  10. Drizzle the glaze generously over the cooled banana bread and immediately sprinkle with your favorite colorful sprinkles.
