- 4 Bell Peppers
- 1 Cup Cooked Rice
- 1 Cup Italian Sausage (or Ground Beef)
- 1 Cup Pizza Sauce
- 1 Cup Shredded Mozzarella Cheese
- 1/2 Cup Diced Pepperoni
- 1 Teaspoon Italian Seasoning
- Salt and Pepper to Taste
- Fresh Parsley for Garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds. Set aside.
- In a skillet over medium heat, cook the Italian sausage or ground beef until browned, about 5-7 minutes. Drain any excess fat.
- Stir in the cooked rice, pizza sauce, diced pepperoni, Italian seasoning, salt, and pepper into the meat mixture and remove from heat.
- Spoon the filling into each prepared bell pepper and place them upright in a greased baking dish.
- Top each pepper with a spoonful of pizza sauce and sprinkle with shredded mozzarella cheese.
- Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
