Description

Juicy bell peppers stuffed with a savory mixture of seasoned Italian sausage, gooey mozzarella cheese, and zesty pizza sauce, creating a wholesome and easy-to-make meal.


Ingredients

  • 4 Bell Peppers
  • 1 Cup Cooked Rice
  • 1 Cup Italian Sausage (or Ground Beef)
  • 1 Cup Pizza Sauce
  • 1 Cup Shredded Mozzarella Cheese
  • 1/2 Cup Diced Pepperoni
  • 1 Teaspoon Italian Seasoning
  • Salt and Pepper to Taste
  • Fresh Parsley for Garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds. Set aside.
  3. In a skillet over medium heat, cook the Italian sausage or ground beef until browned, about 5-7 minutes. Drain any excess fat.
  4. Stir in the cooked rice, pizza sauce, diced pepperoni, Italian seasoning, salt, and pepper into the meat mixture and remove from heat.
  5. Spoon the filling into each prepared bell pepper and place them upright in a greased baking dish.
  6. Top each pepper with a spoonful of pizza sauce and sprinkle with shredded mozzarella cheese.
  7. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  8. Garnish with fresh parsley before serving.

Notes

Customize with your favorite toppings. Leftover filling can be stored in an airtight container for up to 3 days.
