- 4 large russet potatoes
- 1 cup cooked steak, chopped
- 1 cup shrimp, peeled and deveined
- 1 cup mushrooms, sliced
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup sour cream
- 2 tablespoons butter
- Salt and pepper to taste
- Chives or green onions for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the russet potatoes thoroughly and poke holes in them with a fork.
- Bake the potatoes for 45-60 minutes until tender.
- In a skillet over medium heat, melt butter and sauté sliced mushrooms until softened for about 4-5 minutes.
- Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes. Season with salt and pepper.
- Once the potatoes are done, slice them open and fluff the insides with a fork.
- Layer the shrimp and mushroom mixture over the potatoes, followed by the chopped steak and shredded cheese.
- Top with sour cream and garnish with chives. Serve hot!
