Description

A delightful fusion of baked russet potatoes loaded with tender steak, succulent shrimp, and sautéed mushrooms, topped with creamy sour cream and fresh chives.


Ingredients

  • 4 large russet potatoes
  • 1 cup cooked steak, chopped
  • 1 cup shrimp, peeled and deveined
  • 1 cup mushrooms, sliced
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup sour cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chives or green onions for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the russet potatoes thoroughly and poke holes in them with a fork.
  3. Bake the potatoes for 45-60 minutes until tender.
  4. In a skillet over medium heat, melt butter and sauté sliced mushrooms until softened for about 4-5 minutes.
  5. Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes. Season with salt and pepper.
  6. Once the potatoes are done, slice them open and fluff the insides with a fork.
  7. Layer the shrimp and mushroom mixture over the potatoes, followed by the chopped steak and shredded cheese.
  8. Top with sour cream and garnish with chives. Serve hot!
