- 1 cup long-grain rice
- 2 cups diced tomatoes (canned or fresh)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp ground cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium-high heat. Season steak with salt, pepper, paprika, and cumin. Cook to desired doneness. Rest for 5 minutes.
- Sauté onion and garlic in the same skillet until translucent, about 2-3 minutes.
- Add rice, cook for 1-2 minutes, stirring frequently to absorb flavors.
- Stir in diced tomatoes and 2 cups of water, cover, and simmer for about 20 minutes until rice is tender.
- Slice steak against the grain and serve over tomato rice, garnished with parsley.
