- 8 ounces ramen noodles
- 2 tablespoons butter
- 3 cloves garlic (minced)
- 1 pound shrimp (peeled and deveined)
- 2 tablespoons sesame oil
- 1 medium shallot (minced)
- 3 pieces Thai chili peppers
- 8 ounces baby bella mushrooms (sliced)
- 1 medium red bell pepper (sliced)
- 1 tablespoon soy sauce
- 1 tablespoon mirin
- 2 tablespoons lime juice (fresh)
- 1 tablespoon brown sugar
Instructions
- Cook the ramen according to package directions, discarding the seasoning packets. Drain once cooked and set aside.
- In a large pan or skillet, heat the butter over medium heat until melted.
- Add minced garlic and sauté for about 2 minutes until fragrant and lightly golden.
- Toss in the shrimp and cook for 3 minutes on each side until pink and opaque. Remove to a bowl and keep warm.
- Pour in the sesame oil and heat for a moment.
- Add shallots and Thai chili peppers, sautéing for another 2 minutes.
- Stir in the mushrooms and red bell peppers. Sauté for about 5 minutes until tender.
- Stir in soy sauce, mirin, and lime juice. Bring to a slight boil, then simmer for about 5 minutes.
- Stir in brown sugar, turning off heat once dissolved.
- Add the cooked ramen and shrimp, tossing together until well coated.
