Ingredients

  • 8 ounces ramen noodles
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • 1 pound shrimp (peeled and deveined)
  • 2 tablespoons sesame oil
  • 1 medium shallot (minced)
  • 3 pieces Thai chili peppers
  • 8 ounces baby bella mushrooms (sliced)
  • 1 medium red bell pepper (sliced)
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin
  • 2 tablespoons lime juice (fresh)
  • 1 tablespoon brown sugar

Instructions

  1. Cook the ramen according to package directions, discarding the seasoning packets. Drain once cooked and set aside.
  2. In a large pan or skillet, heat the butter over medium heat until melted.
  3. Add minced garlic and sauté for about 2 minutes until fragrant and lightly golden.
  4. Toss in the shrimp and cook for 3 minutes on each side until pink and opaque. Remove to a bowl and keep warm.
  5. Pour in the sesame oil and heat for a moment.
  6. Add shallots and Thai chili peppers, sautéing for another 2 minutes.
  7. Stir in the mushrooms and red bell peppers. Sauté for about 5 minutes until tender.
  8. Stir in soy sauce, mirin, and lime juice. Bring to a slight boil, then simmer for about 5 minutes.
  9. Stir in brown sugar, turning off heat once dissolved.
  10. Add the cooked ramen and shrimp, tossing together until well coated.
