Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 pound spicy Italian sausage, sliced
  • 4 cups chicken broth
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Sauté the diced onion until translucent, about 3-4 minutes, then add the minced garlic and cook for 1 more minute.
  3. Add the sliced spicy Italian sausage and cook until browned, breaking it into smaller pieces, about 5 minutes.
  4. Pour in the chicken broth, then add the cannellini beans and diced tomatoes. Stir in the dried thyme.
  5. Bring to a boil, then reduce the heat and simmer for 20 minutes. Mash some of the beans for a thicker texture if desired.
  6. Season with salt and pepper to taste, ladle into bowls, and garnish with fresh parsley. Enjoy hot!
