- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 pound spicy Italian sausage, sliced
- 4 cups chicken broth
- 1 can (15 ounces) cannellini beans, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Sauté the diced onion until translucent, about 3-4 minutes, then add the minced garlic and cook for 1 more minute.
- Add the sliced spicy Italian sausage and cook until browned, breaking it into smaller pieces, about 5 minutes.
- Pour in the chicken broth, then add the cannellini beans and diced tomatoes. Stir in the dried thyme.
- Bring to a boil, then reduce the heat and simmer for 20 minutes. Mash some of the beans for a thicker texture if desired.
- Season with salt and pepper to taste, ladle into bowls, and garnish with fresh parsley. Enjoy hot!
