Ingredients

  • 2 chicken breasts
  • ¼ cup honey
  • 2 tbsp fresh ginger, grated
  • ¼ cup soy sauce
  • 2 cloves garlic, minced
  • 1 cup rice
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • Olive oil for cooking
  • Yum Yum Sauce:
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tsp garlic powder
  • 2 tbsp sugar
  • Paprika (for flavor)
  • Water (to thin out)

Instructions

  1. Cook rice as directed on package.
  2. Marinate chicken in honey, ginger, soy sauce, and garlic for at least 30 mins.
  3. Heat olive oil in a pan; cook chicken until fully cooked.
  4. Stir-fry mixed vegetables in the same pan.
  5. Assemble bowls with rice, chicken, veggies, and Yum Yum sauce on top.
