Description

A creamy, flavorful Southern Sweet Potato Casserole that is quick, easy, and budget-friendly, perfect for busy weeknights or special occasions.


Ingredients

  • 3 cups mashed sweet potatoes
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 cup granulated sugar
  • 2 large eggs, beaten
  • 1/2 cup butter, melted
  • 1/2 cup brown sugar
  • 1 cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the mashed sweet potatoes, milk, vanilla extract, ground cinnamon, sugar, beaten eggs, and melted butter until smooth.
  3. Pour the mixture into a greased casserole dish.
  4. In a small bowl, combine brown sugar and chopped pecans; sprinkle over the top.
  5. Bake for 25-30 minutes, or until golden brown.
  6. Allow to cool slightly before serving.

Notes

For a dairy-free version, substitute milk with almond or coconut milk and use plant-based butter. You can also make it ahead of time and store it in the refrigerator before baking.
