- 3 cups mashed sweet potatoes
- 1/2 cup milk
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/2 cup granulated sugar
- 2 large eggs, beaten
- 1/2 cup butter, melted
- 1/2 cup brown sugar
- 1 cup chopped pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the mashed sweet potatoes, milk, vanilla extract, ground cinnamon, sugar, beaten eggs, and melted butter until smooth.
- Pour the mixture into a greased casserole dish.
- In a small bowl, combine brown sugar and chopped pecans; sprinkle over the top.
- Bake for 25-30 minutes, or until golden brown.
- Allow to cool slightly before serving.
Notes
For a dairy-free version, substitute milk with almond or coconut milk and use plant-based butter. You can also make it ahead of time and store it in the refrigerator before baking.
