Description

A foolproof and flavorful Southern Fried Chicken Batter that results in an irresistible crunchy crust, ideal for home frying.


Ingredients

  • 2 large eggs
  • 1 cup milk (or buttermilk)
  • 2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1 tablespoon paprika
  • 1 teaspoon poultry seasoning
  • 1 teaspoon garlic salt
  • 1 teaspoon black pepper
  • Neutral oil (for frying)

Instructions

  1. Gather all ingredients and tools: chicken pieces, eggs, milk, flour, seasonings, oil, thermometer, and bowls.
  2. In a mixing bowl, combine eggs and milk. Whisk until smooth.
  3. In another bowl, mix flour, cornstarch, paprika, poultry seasoning, garlic salt, and black pepper.
  4. Coat chicken pieces by first dipping into the egg mixture, then into the dry mix. Optional: Double-dip for extra crunch.
  5. Place dredged pieces on a wire rack to rest for 10–15 minutes.
  6. Heat oil to 325–350°F (162–177°C). Test with a small piece of bread.
  7. Fry chicken in batches until golden brown and cooked through. Maintain oil temperature.
  8. Remove to a wire rack to drain and rest for 5 minutes before serving.

Notes

For a lighter version, consider oven frying or air frying. Ensure to test the oil temperature for optimal frying results.
