- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 tbsp sugar (optional)
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1 1/4 cups buttermilk
- 2 large eggs
- 3 tbsp melted butter
- 1–2 tbsp honey
- 1 cup creamed corn (optional)
Instructions
- Preheat your oven to 425°F (218°C) with a 10–12 inch cast iron skillet inside, adding 2–3 tbsp butter to melt.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk buttermilk, eggs, melted butter, and honey. Fold in creamed corn if desired.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Carefully remove the hot skillet, pour in the batter, and bake for 20–25 minutes until golden.
- Let cool for 5 minutes, slice, and serve warm.
Notes
For best results, ensure your skillet is well-seasoned and always preheat it properly for a crispy crust. You can customize with add-ins like cheese or jalapeños.
