- 300 g (2 1/2 cups) all-purpose flour
- 15 g (2 tbsp) cornstarch
- 1 tsp (6 g) baking soda
- 1/2 tsp (3 g) fine sea salt
- 170 g (3/4 cup; 1 1/2 sticks) unsalted butter, softened
- 150 g (3/4 cup) packed light brown sugar
- 50 g (1/4 cup) granulated sugar
- 1 large egg
- 1 large egg yolk
- 240 g (1 cup) mashed ripe banana
- 2 tsp (10 ml) pure vanilla extract
- 220 g (1 1/4 cups) semisweet chocolate chips or chopped chocolate
Instructions
- Preheat the oven to 175°C (350°F) and prepare pans.
- In a medium bowl, whisk together flour, cornstarch, baking soda, and salt.
- In a large bowl, cream together butter, brown sugar, and granulated sugar.
- Add the egg and egg yolk, then incorporate mashed banana and vanilla.
- Fold the dry ingredients into the wet ingredients until just combined.
- Fold in chocolate chips and chill the dough for 15 minutes if desired.
- Drop mounds of dough 5 cm (2 in) apart on prepared baking sheets and bake for 10–12 minutes.
- Allow cookies to cool slightly before transferring to a cooling rack.
Notes
For best results, chill the dough slightly before baking to control spread. Store cookies in an airtight container for up to 4 days.
