  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh herbs for garnish (like parsley or cilantro)

Instructions

  1. Prep your ingredients by dicing the onions into ¼-inch pieces.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent for about 5 minutes.
  3. Add minced garlic and cook for an additional minute.
  4. Stir in white beans, vegetable broth, smoked paprika, thyme, and oregano. Bring to a simmer.
  5. Cook for 15-20 minutes, allowing the flavors to meld beautifully.
