Delicious smoky stuffed poblano peppers filled with sausage and gooey cheese, perfect for any occasion.
Ingredients

- 4 large poblano peppers
- 1 pound ground sausage
- 1 cup shredded cheddar cheese
- 1/2 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Cut tops off peppers and remove seeds.
- Sauté onion and garlic in olive oil until translucent.
- Add sausage, cook until browned.
- Mix with rice, cheese, paprika, salt & pepper.
- Stuff peppers and place in a baking dish.
- Cover with foil, bake for 25-30 mins, then uncover for 10 more mins.
- Serve warm and enjoy!
