Description
These incredible Smoked Stuffed Meatballs are seasoned beef and pork patties wrapped around a gooey core of mozzarella cheese, slow-smoked to perfection and glazed with sticky BBQ sauce.

- 1 lb ground beef (80/20 blend)
- 1 lb ground pork (For tenderness)
- 1/2 cup breadcrumbs (Binder)
- 1 egg (Binder)
- 2 tbsp BBQ rub (Seasoning)
- 8 oz mozzarella cheese (Cubed block cheese)
- 1 cup BBQ sauce (For glazing)
- 2 tbsp chives (Chopped garnish)
Instructions
- Preheat smoker to 225°F. Mix beef, pork, crumbs, egg, and spices in a bowl.
- Form meat patties, place a cheese cube in the center, and seal tightly into a ball.
- Smoke meatballs directly on the grate for 45-60 minutes.
- Increase heat to 350°F. Brush meatballs with BBQ sauce and cook 10 more minutes until 165°F internal.
- Remove from grill, garnish with chives, and serve hot.
