Description

A deliciously simple Slow Cooker Lemon Herb Chicken paired with fluffy rice, perfect for busy weeknights or cozy family dinners.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 2 lemons (juiced and zested)
  • 2 tablespoons olive oil
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • Salt and pepper to taste
  • 2 cups jasmine or basmati rice
  • 4 cups water or chicken broth for rice
  • Fresh parsley for garnish (optional)

Instructions

  1. Whisk broth, lemon juice, zest, olive oil, herbs, salt, and pepper together in the slow cooker.
  2. Add and coat chicken breasts.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. Cook rice 30 minutes before serving.
  5. Shred chicken in the cooker and serve over rice.

Notes

For best flavor, marinate the chicken in the lemon-herb mixture for 30 minutes before cooking.
