A deliciously simple Slow Cooker Lemon Herb Chicken paired with fluffy rice, perfect for busy weeknights or cozy family dinners.
Ingredients

- 4 boneless, skinless chicken breasts
- 1 cup chicken broth
- 2 lemons (juiced and zested)
- 2 tablespoons olive oil
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- Salt and pepper to taste
- 2 cups jasmine or basmati rice
- 4 cups water or chicken broth for rice
- Fresh parsley for garnish (optional)
Instructions
- Whisk broth, lemon juice, zest, olive oil, herbs, salt, and pepper together in the slow cooker.
- Add and coat chicken breasts.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Cook rice 30 minutes before serving.
- Shred chicken in the cooker and serve over rice.
Notes
For best flavor, marinate the chicken in the lemon-herb mixture for 30 minutes before cooking.
