- 1 lb smoked sausage, sliced
- 1 lb chicken breasts
- 1 cup okra, sliced
- 1 bell pepper, diced
- 1 onion, diced
- 2 celery stalks, diced
- 1/2 cup flour
- 1/2 cup oil (butter and olive oil)
- 4 cups chicken broth
- 1 can diced tomatoes
- 2 tbsp Worcestershire sauce
- 2 tbsp file powder
- Salt and pepper to taste
- Cayenne pepper to taste (optional)
- Cooked rice for serving
Instructions
- Prepare and brown the sausage in a skillet over medium-high heat for 5–7 minutes.
- Make the roux by adding butter and oil, then gradually whisk in the flour for 10–15 minutes until it reaches a deep brown color.
- Add the diced bell pepper, onion, and celery to the roux and stir briefly until softened.
- Stir in spices, garlic, and Worcestershire sauce.
- Transfer roux and veggie mixture to the slow cooker, add the chicken broth, diced tomatoes, and okra.
- Place chicken and sausage in the slow cooker, cover, and cook on high for 3–4 hours or low for 7–8 hours.
- Remove chicken, shred, and return it to the pot along with the raw shrimp, cooking until shrimp are pink.
- Season to taste and serve hot over rice.
Notes
Gumbo is highly customizable; you can adjust spices and proteins as needed. For a spicy kick, add cayenne pepper.
