Description

A rich and hearty slow cooker stew featuring corned beef, cabbage, and potatoes, perfect for family gatherings and comfort food lovers.


Ingredients

Scale
  • 2 lbs corned beef brisket
  • 4 cups water
  • 4 medium potatoes, peeled and cut into chunks
  • 4 carrots, sliced
  • 1 onion, chopped
  • 1 small head cabbage, cut into wedges
  • 2 cloves garlic, minced
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt to taste

Instructions

  1. Prep your ingredients: Dice onions and chop all vegetables.
  2. Layer the corned beef and spices in the slow cooker.
  3. Add the vegetables around the meat.
  4. Cover and cook on low for 8-10 hours.
  5. Once cooked, slice the beef and serve with vegetables.

Notes

Ensure not to add too much extra liquid, as the corned beef produces its own during cooking. Avoid lifting the lid frequently to retain heat.
