- 2 lamb shanks
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup red wine
- 2 cups beef or vegetable broth
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
- Salt and pepper to taste

Instructions
- Prep Your Ingredients – Gather all your ingredients, chop the vegetables, and mince the garlic.
- Sear the Lamb Shanks – In a large skillet, heat olive oil and sear the lamb shanks until browned on all sides.
- Sauté the Vegetables – In the same skillet, add onion, garlic, carrots, and celery. Sauté until softened.
- Deglaze with Red Wine – Pour red wine into the pan and scrape the bottom to remove flavorful bits.
- Add Remaining Ingredients – Add broth, tomato paste, thyme, rosemary, salt, and pepper. Stir to combine.
- Slow-Cook the Shanks – Return lamb shanks to the pot and cook on low for 4-6 hours.
- Serve and Garnish – Serve lamb shanks with herb-infused gravy and garnish with fresh herbs.
Notes
To enhance flavors, consider using fresh herbs instead of dried. Leftovers can be stored for up to 3 days and taste even better after a day.
