  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • 1 cup grits
  • 2 cups water
  • 2 tablespoons butter
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Prep Your Ingredients: Gather all your ingredients and utensils. Chop the onion and mince the garlic.
  2. Sear the Brisket: Preheat your oven to 300°F (150°C). In a pot, heat olive oil over medium heat. Season the brisket and sear it for 4-5 minutes per side.
  3. Build the Base: Remove the brisket and sauté onion and garlic in the same pot until softened.
  4. Add the Flavorful Liquid: Stir in beef broth, red wine, tomato paste, Worcestershire sauce, thyme, and rosemary. Simmer gently.
  5. Braise the Brisket: Return the brisket to the pot, cover tightly, and transfer to the oven. Braise for 3-4 hours or until fork-tender.
  6. Cook the Herb Grits: In a smaller pot, bring water to a boil. Gradually add grits and simmer according to package instructions. Stir in butter and parsley.
  7. Serve and Savor: Slice the brisket and serve it over the herb grits, drizzling some braising liquid on top.
