Description

A quick and comforting Chicken–Pearl Couscous Soup made with tender chicken, pearl couscous, and fresh vegetables, perfect for busy weeknights or family dinners.


Ingredients

  • 1 lb Chicken Breast
  • 1 cup Pearl Couscous
  • 4 cups Chicken Broth
  • 1 Onion, Chopped
  • 2 Carrots, Sliced
  • 2 Celery Stalks, Sliced
  • 2 Cloves Garlic, Minced
  • 1 teaspoon Thyme
  • Salt and Pepper to Taste
  • Olive Oil
  • Fresh Parsley for Garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery; sauté until softened.
  2. Stir in garlic and thyme; cook for an additional minute.
  3. Add chicken broth and bring to a boil.
  4. Incorporate chicken and pearl couscous; reduce heat to simmer for 15-20 minutes.
  5. Remove chicken, shred it, and return to the pot.
  6. Season with salt and pepper; garnish before serving.

Notes

This soup tastes even better the next day as the flavors meld together. Suitable for freezing up to 3 months.
