- 1 1/2 pounds large shrimp (16–20 count, peeled and deveined, tails on or off)
- 2 tablespoons unsalted butter
- 2 tablespoons extra virgin olive oil
- 4 garlic cloves (minced)
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup dry white wine (like Sauvignon Blanc or low-sodium chicken broth)
- 1 ½ tablespoons lemon juice (plus wedges for serving)
- 1/4 cup chopped fresh parsley
- Salt and freshly ground black pepper (to taste)
Instructions
- Pat the shrimp dry with paper towels and season evenly with 1/2 teaspoon salt and 1/2 teaspoon black pepper.
- Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large non-reactive skillet over medium-high heat. Cook the shrimp for 1 to 2 minutes per side until opaque. Transfer shrimp to a plate.
- Reduce heat to medium, add remaining olive oil and butter, and sauté garlic and red pepper flakes for about 30 seconds.
- Pour in the white wine and simmer for 2 minutes to reduce by half. Stir in lemon juice.
- Return shrimp to skillet, toss to coat in sauce, and stir in chopped parsley. Season with additional salt and pepper if needed.
- Serve immediately, garnished with lemon wedges.
