Description

Easy Shrimp Scampi with Garlic and White Wine Recipe featuring succulent large shrimp cooked quickly in a garlic-butter and white wine sauce.


Ingredients

  • 1 1/2 pounds large shrimp (1620 count, peeled and deveined, tails on or off)
  • 2 tablespoons unsalted butter
  • 2 tablespoons extra virgin olive oil
  • 4 garlic cloves (minced)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup dry white wine (like Sauvignon Blanc or low-sodium chicken broth)
  • 1 ½ tablespoons lemon juice (plus wedges for serving)
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper (to taste)

Instructions

  1. Pat the shrimp dry with paper towels and season evenly with 1/2 teaspoon salt and 1/2 teaspoon black pepper.
  2. Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large non-reactive skillet over medium-high heat. Cook the shrimp for 1 to 2 minutes per side until opaque. Transfer shrimp to a plate.
  3. Reduce heat to medium, add remaining olive oil and butter, and sauté garlic and red pepper flakes for about 30 seconds.
  4. Pour in the white wine and simmer for 2 minutes to reduce by half. Stir in lemon juice.
  5. Return shrimp to skillet, toss to coat in sauce, and stir in chopped parsley. Season with additional salt and pepper if needed.
  6. Serve immediately, garnished with lemon wedges.
