Description

An impressive seafood dish featuring scallops and shrimp in a creamy, sun-dried tomato sauce, perfect for weeknight dinners or special occasions.


Ingredients

Scale
  • 8 large sea scallops
  • 8 large shrimp (peeled and deveined)
  • Salt & pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the scallops and shrimp with salt and pepper.
  2. Sear the scallops for 2-3 minutes on each side. Remove from the skillet.
  3. In the same skillet, add garlic and sauté for about 1 minute until fragrant.
  4. Stir in sun-dried tomatoes and heavy cream, bring to a simmer.
  5. Add Parmesan cheese and stir until melted.
  6. Return scallops and shrimp to skillet, coating with sauce.
  7. Serve garnished with fresh basil.

Notes

For a dairy-free option, substitute heavy cream with coconut cream. You can also customize with seasonal veggies or different types of seafood.
