- 8 large sea scallops
- 8 large shrimp (peeled and deveined)
- Salt & pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Heat olive oil in a skillet over medium-high heat. Season the scallops and shrimp with salt and pepper.
- Sear the scallops for 2-3 minutes on each side. Remove from the skillet.
- In the same skillet, add garlic and sauté for about 1 minute until fragrant.
- Stir in sun-dried tomatoes and heavy cream, bring to a simmer.
- Add Parmesan cheese and stir until melted.
- Return scallops and shrimp to skillet, coating with sauce.
- Serve garnished with fresh basil.
Notes
For a dairy-free option, substitute heavy cream with coconut cream. You can also customize with seasonal veggies or different types of seafood.
