A delightful twist on the classic Reuben sandwich, this Savory Reuben Bake combines layers of corned beef, sauerkraut, Swiss cheese, and an egg mixture for a perfect comfort food dish.

- 4 cups cubed rye or white bread
- 1 pound corned beef, thinly sliced
- 1 cup sauerkraut, drained
- 1 cup Swiss cheese, shredded
- 1/2 cup Russian or Thousand Island dressing
- 4 large eggs
- 1 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Layer half the cubed bread, followed by half the corned beef, sauerkraut, and Swiss cheese. Repeat layers.
- In a large bowl, whisk eggs, milk, garlic powder, onion powder, salt, and pepper together. Pour over the layers.
- Cover with foil and bake for 30 minutes, then uncover and bake for an additional 15-20 minutes.
- Allow to cool before slicing and serving.
