Description

A delightful twist on the classic Reuben sandwich, this Savory Reuben Bake combines layers of corned beef, sauerkraut, Swiss cheese, and an egg mixture for a perfect comfort food dish.


Ingredients

  • 4 cups cubed rye or white bread
  • 1 pound corned beef, thinly sliced
  • 1 cup sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 1/2 cup Russian or Thousand Island dressing
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Layer half the cubed bread, followed by half the corned beef, sauerkraut, and Swiss cheese. Repeat layers.
  3. In a large bowl, whisk eggs, milk, garlic powder, onion powder, salt, and pepper together. Pour over the layers.
  4. Cover with foil and bake for 30 minutes, then uncover and bake for an additional 15-20 minutes.
  5. Allow to cool before slicing and serving.
